YEAST EXTRACT

Yeast extract is a natural ingredient produced from yeast without any chemical additives. Yeast extract not only add savory tastes, but also brings out and balances existing flavors in food products. 

About Yeast Extract

  • Yeast extract is rich in high-quality proteins, serves as a good solution for vegetarian cuisines. 

  • By replacing a part of the salt, it can contribute to a balanced and low-salt diet.

  • Unlike monosodium glutamate (MSG) which is a single substance additive, yeast extract is composed of a variety of amino acids, carbohydrates, vitamins, and minerals.

  • Since very small quantities can create exceptional taste, it is often used as a natural ingredients just as with herbs and spices.

  • GMO free, Animal Free, Allergen Free

Yeast Extract Composition

  • Total Protein (60% ~ 75%)

  • Total Nitrogen (10%~12%)

  • Amino Nitrogen (4~6%)

  • Ash (10~15%)

  • Sodium Choloride (< 0.5%)

  • Nucleotides (4~20%) : intensify the umami sensation caused by glutamate

Yeast Extract

Glutamate

  • Foods with yeast extract have a savory taste due to its glutamate content.

  • Glutamate is present in all protein rich foods and it is formed naturally through the enzymatic ripening process, for instance in tomatoes and Parmesan.

  • Althouth it has no animal ingredients, the taste of yeast extract is similar to that of a meat broth, because both contains glutamic acid which is responsible for the so-called "umami" flavor.

  • Glutamate accounts for approximately 5% of the total extract. (Fact: one tomato contains approximately twice the amount of glutamate present in 200ml of yeast extract flavored broth)
